Calcium chloride dihydrate (CaCl2﹒2H2O) is the hydrated form of calcium chloride. Calcium chloride is an inorganic compound composed of calcium and chloride. It has various applications. For example, due to its high hygroscopicity, it can be used as a desiccant; for deicing and dust removal; for pavement; as a brine for refrigeration equipment, ice and cement; to increase the hardness of swimming pool water; as a food additive; to increase cell membrane permeability Sex to promote genetic transformation of cells; used to treat hypocalcemia where the body requires a rapid increase in plasma calcium levels. For its production, it can be produced directly from limestone or as a by-product through the Solvari process.
Calcium chloride is a general-purpose food additive that is readily soluble in water in anhydrous form, with a solubility of 59 g in 100 ml of water at 0°C. It dissolves with the release of heat. It also exists in the form of calcium chloride dihydrate and is extremely soluble in water, with a solubility of 97 g in 100 ml at 0°C. It is used as a curing agent for canned tomatoes, potatoes and apple slices. In evaporated milk, it is used at no more than 0.1% to adjust the salt balance to prevent the milk from curdling during the sterilization process. It is used with disodium EDTA to preserve the flavor of kimchi and acts as a source of calcium ions to react with alginate to form a gel.

Food grade calcium chloride is used in a variety of applications in the food and beverage industry.

The crystallization of porcine pancreatic elastase in the presence of CaCl2 in the presence of sodium citrate reveals binding of calcium in the metal binding site of the protein.The effect of CaCl2 on the total fluorescence in the polymerication of the tubulin-like FtsZ division protein of Escherichia coli has been studied by a multiwell fluorescent assay.
Calcium chloride act as precipitants during protein crystallization process. It also enhances the competence of Escherichia coli cells as well as strengthened β-lactoglobulin gels by forming crossbridges.
